As summer fades and the crispness of fall sets in, a special magic fills the air. I first discovered fresh figs while living in Bologna, Italy. In our backyard, fig trees become laden with sweet, ripe figs, offering endless culinary possibilities. From savory pizzas & ricotta toasts with fresh figs to sweet fig preserves for prosciutto paninis, the options are abundant. Today, I am thrilled to share a special recipe for Chicken and Fig Agrodulce. It’s perfect for private dinner parties and stands out in any catering spread in Charlotte.


The Allure of Fresh Figs


Figs boast a rich history, celebrated for their unique flavor and texture. In Bologna, the end of summer marks the harvest of these luscious fruits. The sight of heavy fig-laden trees invites everyone to indulge in their sweetness. To carry on the seasonal tradition, I have planted these fig jewels in my own garden and throughout our Something Classic kitchen gardens. Not only do we use the figs, but the beautiful leaves for cheese and charcuterie boards.


Cultivating figs in your backyard goes beyond just fruit; it's a cherished experience. The wait for ripened figs brings joy, and the moment you pick them fresh is unparalleled. Consider this: a mature fig tree can produce up to 100 pounds of fruit in one growing season. Each fig tells a story, connecting you to the land and reminding you of the transience of the season. I rush to pluck the figs as soon as they ripen or I'll have to share them with the birds... they like them, too.


Chicken and Fig Agrodulce: A Recipe to Remember


This Chicken and Fig Agrodulce recipe beautifully combines savory and sweet flavors, making it a standout dish for any gathering. This recipe is a traditional Roman recipe, where they used to preserve their meats with sweet and sour marinades. The sweet is the caramelized onions, figs and preserves (dolce) and the sour comes from the balsamic vinegar (agro). Here’s how to prepare it:


Ingredients


  • 4 chicken thighs, bone-in and skin-on

  • 1 cup fresh figs, halved (or use dried figs if necessary)

  • 1/2 cup balsamic vinegar

  • 1/4 cup honey or fig preserves

  • 1 large onion, thinly sliced

  • 2 cloves garlic, minced

  • Olive oil

  • Salt and pepper to taste

  • Fresh rosemary for flavor & garnish


Instructions


  1. Prepare the Chicken: Begin by seasoning the chicken thighs with salt and pepper. Add a few sprigs of rosemary as well. Heat olive oil in a large skillet over medium-high heat. Add the chicken skin-side down and sear for about 5-7 minutes until golden brown. Flip the chicken and cook for another 5 minutes. Once done, remove the chicken and set aside.


  2. Sauté the Aromatics: In the same skillet, combine the sliced onion and minced garlic. Sauté until the onion turns translucent and fragrant, around 3-4 minutes.


  3. Create the Agrodulce Sauce: Pour in the balsamic vinegar and honey/fig preserves, scraping up any browned bits from the skillet. Bring the mixture to a simmer and allow it to reduce for about 5 minutes.


  4. Combine and Cook: Return the chicken to the skillet, nestling it into the sauce. Add the figs, cut-side up. Cover and simmer on low heat for about 25-30 minutes, or until the chicken is thoroughly cooked and tender.


  5. Serve: Finish the dish by garnishing with fresh thyme. Pair it with polenta or pearl couscous, along with grilled vegetables for a complete meal.
